Located along the majestic Hudson River, the city of Hudson, NY has a rather salacious history. Whalers and sailors, dancing girls and corrupt authorities filled the bar rooms and street corners with stories to be told for generations to come. These stories were told over pints of beer pouring from the local brewery until prohibition reared its ugly head. Not since then has Hudson had a local beer to call their very own.
3 *wise* men got together, united with their love of all things brew, and decided it was time to bring back to life a brewery the fine people of Hudson could call their own again. Paying tribute to the seedy past that makes our great little city so colorful, our tasting room, our rich flavor profiles and many of our brew names, reflect a time we won't forget. Come in for a beer, stay for a story. We promise you the ghosts of Hudson's past won't disappoint.
Our brewery is licensed under a farm brewery license which means a percentage of our grains and hops come directly from our local farms. The farmers come weekly to pick up the large volumes of spent grains/mash to feed their livestock or for use as compost. This cycle is very important to us & we are honored to have you be a part of it with every glass. Cheers!

The brewery started as a mutual agreement of providing excellent farm-style beers in the barn on working farm setting.
The barn has been outfitted with original and handcrafted wood while the required building corrections were crafted and fitted by local Mennonite carpenters and builders. Geothermal energy is used to heat the brewing and fermentation area of the brewery while it also cools the glycol used in temperature control of fermentation. A pavilion and out building have been added to host and support weddings and other large outdoor events.

We're Willow Rock Brewing Company, a brewery located in the southeast part of Syracuse, NY; near Syracuse University's South Campus. We focus on American style craft beers, but usually, have other styles available in our tap room in the form of seasonals and limited edition releases.
EMPIRE BREWING COMPANY, est. 1994, is an award-winning brewer of handcrafted ales and lagers in the heart of downtown Syracuse. We aspire to provide customers with the finest all-natural ingredients available by utilizing fresh locally sourced products from over sixty Central New York farmers. In 2007, Empire modified its business model to focus on sustainability. We define our business philosophy with the phrases “Eat Where You Live™” and “We Grow Beer™” and attempt to embody the practice “Be Excellent” in all facets of our business.
The success gained after test marketing our beers in high profile establishments located throughout New York State led Empire to expand brewing operations to Brooklyn, NY, by forming a contract-brewing alliance with Greenpoint Beer Works. GPBW produced four styles of Empire’s beer in kegs which allowed the company to distribute throughout New York State. With the recent 60 bbl expansion, however, production has been moved entirely back in-house.
When the idea for Druthers was first hatched and we would daydream about what our operation would look like on the day that we fired up the kettles and threw open the doors, we all had the same vision - renovating an old warehouse, bringing in rows of huge, shiny, stainless steel tanks, adding wall to wall stacks of kegs, and working among the consistent humming of a Laverne & Shirley-style bottling line.
It’s funny how visions can change when high ticket brewing systems run into the shoestring budget that we had. After seeing the price for a huge brewing system and not being able to clearly articulate how we would sell (or who would buy) enough beer to make ends meet, we were faced with a tough choice – let the brewing dream die an untimely death or start small – with a brew pub.
We chose to start with a brew pub and now have two, with locations in Saratoga Springs, New York and Albany, New York. We pair our rotating menu of craft beers with some pretty tasty comfort food offerings.
If you are in the area, stop by and see us. There is nothing quite as satisfying as drinking a pint drawn directly from the serving tanks. No bottles, no packaging, just kettle to fermenter to serving tank to your glass. The freshness is unparalleled.
